Even in 1958 I knew that someday I would need a photo of Pink Adobe for my blog


As far as I know The Pink Adobe in downtown Santa Fe, New Mexico, was the first place I experienced New Mexican cuisine, and it started a lifelong quest to seek it out any chance I had. The Pink Adobe, according to its web site, has been “Serving New Mexican Cajun Since 1944.” They do have traditional New Mexican food such as Santa Fe Traditional Enchiladas for $25 at the current menu price, and there is a short list of other Mexican and New Mexican items. The Plato Mexicano is $2.25 on the 1958 menu and $38 in 2025. The whole menu has what seem to be ridiculous prices but I least I would have an opportunity to re-experience what I thought was an important event in my life.

The current menu is available on The Pink Adobe web site. Now they serve Cajun food but in 1958 it seems that the public was more accepting of “Cuisine Française.”

It is a little bit ironic that Cajun food is probably my second favorite regional food behind New Mexican yet I would probably never seek it out anywhere outside of the Gulf Coast. Likewise, I have never experienced a successful attempt at New Mexican food outside the Land of Enchantment or surrounding states (I say this because there is some in El Paso, Texas and supposedly in Tulsa, Oklahoma–although I have not tried this one).
