The Las Vegas airport has become quite a food hub given that thousands of people are there every day, many with time and hunger enough to grab a meal.
In my situation I needed something between connecting flights in the Southwest Airlines section of the terminal, and this looked like a good bet.
Tequileria Grille apparently has no other locations in Las Vegas so I am not sure if it originated as a local restaurant or if it is part of a nayional chain, etc. When I went it was quite busy though.
The Food

Chicken enchiladas
I am usually a big fan of enchiladas everywhere I go, so I chose the Chicken Enchiladas. Many restaurants have a choice between red or green, but here they only come in green. This was a flavorful poblano sauce that came with a good spice level as well. It seemed to be representative of other Mexican restaurants I have found in Arizona and Nevada, or at least it was as close to the Mexican style I have found at many of them. These were very decent enchiladas, especially for ones I would expect to find at the airport.
Other Comments
I know this is in the airport, but the price was at a level I would probably never accept at a normal Mexican restaurant. They took care of me, though, had good iced tea, etc.
